Ingredients for Easy Lemon Cheesecake Bars
- lemon cake mix
- 1 egg
- vegetable oil
- cream cheese
- sugar
- lemon juice
How to make Easy Lemon Cheesecake Bars – Step by Step
- Get started by combining the cake mix with the oil and an egg. Reserve about 3/4 cup of the dough to use as crumble topping for the Lemon Bars.
- Press the remainder of the dough into the bottom of a 9×13 pan and bake for about 15 minutes at 350 degrees. Allow it to cool while you get started on the filling.
- Beat the cream cheese, lemon juice, and sugar together until nice and smooth. Spread it evenly over the baked crust.
- Crumble reserved dough over the top of filling and return to oven for 20-25 minutes until baked and filling is set. Allow Lemon Cheesecake Bars to cool completely before slicing.
Tips and Notes
- To make removal and cutting easier, line your baking dish with parchment paper so that it hangs over the edges of the dish before adding the crust and filling. After the bars have baked and cooled completely, lift the bars out with the overhanging parchment paper and place on a cutting board to slice.
- If you would like to lighten up these lemon bars, you can use light cream cheese in place of the regular cream cheese.
- Store leftover Lemon Cheesecake Bars in the refrigerator for 5 to 7 days.

Could l freeze this recipy? If yes for how long?
Hi! Yes you can freeze these. I would say they would be good to freeze for up to 6 months.
I use a stick of butter to this recipe instead of oil and itโs much better in my opinionโฆ.. also I use lemon zest in the cake batter โฆ. You could use it in the cream cheese too but I think itโs too much but you could do the reverse as well also I add vanilla bean paste to both! Deliciousย
Weโve been using this recipe in our family for MANY YEARS and I lost my paper copy recently and couldnโt remember the exact measurements. I was so excited to find an identical one online! This is always a favorite at get togethers!
Could you add blueberries to this? Maybe in the cream cheese mixture?
I haven’t tried adding blueberries before but I think that would be delicious!
Yes you can! I add fresh blueberries and Iโve also done cherries too. Both are delicious! I just gently fold them into the cream cheese mixture and bake as normal.
Lemon box cake has an artificial taste to me, so I used a yellow cake mix and added the zest of one large lemon to the mixture. Very easy and delicious.
Oh I almost forgot that instead of 1/2 of vegetable oil, 3 tablespoons was Kirkland fruits/veggies pouch.
