Simple Carrot Cake Recipe

This is the BEST Simple Carrot Cake Recipe! Moist, tender carrot cake is topped with a rich, fluffy cream cheese frosting and studded with roasted walnuts.

It’s made from simple ingredients and is the perfect dessert for special occasions like Easter, Mother’s Day, or anything in between.

Ingredients

– Chopped walnuts – White granulated sugar – Light brown sugar – Canola oil – Greek yogurt – Vanilla extract – Eggs – Cinnamon – Carrots – Cream cheese

In a large bowl whisk together the wet ingredients. In a separate bowl, combine the dry ingredients.

Fold the wet ingredients in with the dry, being careful not to over mix.

Add the carrots and 1 cup of roasted walnuts. Divide the cake batter into three 9-inch cake pans that have been sprayed with nonstick cooking spray.
