This One Bowl Banana Bread is so easy to make. It's moist and delicious, and comes together all in one bowl! It's the perfect breakfast or snack, and is the best way to use up ripe bananas.

Ingredients

  • 3-4 large bananas mashed (about 2 cups)
  • 1/2 cup white granulated sugar
  • 1/2 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 2 large eggs room temperature
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Line a 9 x 5 inch loaf pan with parchment paper, or grease well with nonstick cooking spray.
  • Mash the bananas with a fork in a large mixing bowl until smooth. Add the sugar, melted butter, vanilla extract, and eggs one at a time, and mix with an electric mixer on low speed until combined. 
  • Add the flour, baking powder, baking soda, and salt to the wet ingredients. Mix on low speed until just combined. Don't overmix.
  • Pour the batter into the prepared pan. Bake for 50-55 minutes until a toothpick inserted into the center comes out clean, or with a few crumbs. Cool slightly before cutting and serving.

Notes

  • Use very ripe bananas. For the best flavor, use ripe bananas that are very soft and have plenty of black or brown spots. This will add natural sweetness and moisture to your banana bread. The riper the bananas, the better!
  • Sugar substitute: you can sub brown sugar or raw sugar for the sweetener in this recipe.
  • Use room temperature eggs. This will help your ingredients to incorporate smoothly. If you haven’t had time to let your eggs come to room temperature, simply place them in a bowl of warm water for five minutes before adding to the batter.
  • Don't overmix. To prevent your banana bread from becoming too dense or rubbery, mix your ingredients until everything is just combined and no more. 
  • Change up the flavor. You can easily add different flavorings to your one bowl banana bread. Add-ins like chocolate chips, butterscotch chips, peanut butter chips, chopped nuts, or dried or fresh fruit would all add great flavor. 1/2 - 3/4 cup of any of these would be a great place to start.
  • Make them into muffins. You can make this One Bowl Banana Bread into muffins instead of a loaf if you prefer. Fill muffin cups 2/3 of the way full then bake in the preheated oven for 20-25 minutes.
