Crockpot Chicken Alfredo - juicy chicken breasts and noodles are slow cooked in a creamy, garlicky Alfredo sauce. With minimal prep, this comforting meal is made all in one pot and is a total crowd pleaser!

Ingredients

  • 1.5 - 2 pounds boneless, skinless chicken breasts
  • 1/2 cup unsalted butter sliced
  • 4 oz cream cheese
  • 2 cups heavy cream
  • 2 teaspoons garlic powder
  • 2 cloves fresh minced garlic
  • 1/2 teaspoon dried oregano
  • salt and pepper to taste
  • 2/3 cup shredded parmesan cheese
  • 19 oz fresh refrigerated tortellini

Instructions

  • Add chicken breasts, sliced butter, cream cheese, heavy cream, garlic powder, minced garlic, dried oregano, salt, and pepper to the bowl of your crockpot.
  • Place the lid on top and cook for 4-5 hours on low, or 3-4 hours on high.
  • Remove chicken breasts from the crockpot and shred. Whisk the sauce inside of the crockpot until smooth, then return chicken to the pot.
  • Stir in the tortellini noodles and parmesan cheese. Place lid back on and cook for 15-30 more minutes.
  • Sprinkle with additional parmesan cheese and chopped parsley if desired.

Notes

  • Frozen chicken: You can make this using raw or frozen chicken. If using frozen chicken, you will just need to increase the cook time by 1-2 hours.
  • Best pasta to use: I love to use refrigerated tortellini for crockpot pasta recipes and it is what I recommend. It is a quick cooking pasta, so it doesn't take long to cook in the sauce from the crockpot, and it also retains it shape and texture really well. It is the star ingredient in my Cheesy Crockpot Tortellini Recipe, so I knew it would work perfectly with Chicken Alfredo in the crockpot. You can also try other short, dry pastas such as penne, rigatoni, or mini farfalle, though those will take longer to cook, roughly 45 minutes or more. You can also boil your noodles separately on the stove and serve alongside your chicken Alfredo from the crockpot. This will prevent any mushiness, or disintegration that can happen to the pasta when being cooked in the crockpot. This method is also best if you're using long noodles such as spaghetti, fettuccine, or angel hair.
  • Substitutions: You can lighten this recipe up by using 1/3 less fat cream cheese and subbing half and half for the heavy cream. The sauce will not be as rich and creamy, but it will be lighter on calories.
  • Additions: Feel free to add some veggies to this. Broccoli, spinach, and mushrooms would all taste delicious with this Chicken Alfredo! I would add the broccoli or mushrooms when there is about 30 minutes of cooking time left (before adding the pasta and cheese). For spinach, I would add it in with the pasta and cheese.
