This Hoppin' John Recipe is quick and easy to make. It's the perfect savory dish to serve as you ring in the new year, or any time you need a delicious one pot meal!
Cook the bacon slices in a large skillet until browned and crispy. Remove the bacon slices and set them on a paper towel to cool. Leave the grease from the bacon in the skillet. Once the bacon is cooled, chop into small pieces and set aside.
Cook the celery and onion in the reserved bacon grease on medium heat for 3-5 minutes, or until the onions are translucent. Add the garlic and cook for an additional minute or until fragrant. Lastly, add the green peppers and cook for an additional 3-5 minutes.
Add the black eyed peas, rice, salt, pepper, thyme, cayenne pepper, and oregano and cook for an additional 3-5 minutes, stirring well.
Serve warm with sliced green onions on top.

How to Store Leftovers: Any leftover Hoppin John can be stored in an airtight container in the fridge for 3-4 days.
Freezing : Simply place leftovers in a freezer safe container or freezer ziplock bag and freeze for up to three months. Thaw overnight in the fridge before reheating on the stove or in the microwave.
