These Lemon Poppy Seed Muffins are bursting with sweet citrus flavor, and perfect for spring! They are finished with a drizzle of lemon glaze and Honey Granules on top.
Preheat oven to 400 degrees. Spray a muffin tin with cooking spray or line with cupcake liners.
In a large bowl, sift together the flour, baking powder, baking soda, salt, and poppy seeds.
In a separate bowl, whisk together the butter, sugar, eggs, Greek yogurt, vanilla, milk, lemon zest, and lemon juice until smooth. Pour into the bowl with the dry ingredients and mix until just combined.
Divide batter evenly to make 12 muffins. Bake in preheated oven for 12-15 minutes until a toothpick inserted in the center of a muffin comes out clean. Cool on a wire rack.
To prepare the glaze, whisk together the butter, powdered sugar and lemon juice until smooth. Drizzle over the top of muffins then sprinkle with Honey Granules. Enjoy!
