Hoppin John Recipe

This Hoppin’ John Recipe is quick and easy to make. 

It’s the perfect savory dish to serve as you ring in the new year, or any time you need a delicious one pot meal.

– thick cut bacon – celery  – onion – garlic – green bell pepper – black eyed peas – long grain rice – salt – pepper – dried thyme –  cayenne pepper – dried oregano – green onions 

INGREDIENTS

Cook the bacon slices in a large skillet until browned and crispy. Remove the bacon slices and set them on a paper towel to cool. Leave the grease from the bacon in the skillet. Once the bacon is cooled, chop into small pieces and set aside.

Cook the celery and onion in the reserved bacon grease on medium heat for 3-5 minutes, or until the onions are translucent. Add the garlic and cook for an additional minute or until fragrant. Lastly, add the green peppers and cook for an additional 3-5 minutes.

Add the black eyed peas, rice, salt, pepper, thyme, cayenne pepper, and oregano and cook for an additional 3-5 minutes, stirring well.

Serve warm with sliced green onions on top.
