These Air Fryer Breakfast Potatoes are perfectly seasoned and come out tender and crispy every time. We love them as a side for eggs, pancakes, or any breakfast dish. My personal favorite way to enjoy them is with a fried, over-easy egg on top!

Ingredients

  • 1 pound Yukon Gold potatoes diced into 1 inch cubes
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  • Preheat your air fryer to 400 degrees Fahrenheit.
  • In a large mixing bowl, combine the potatoes, olive oil, salt, pepper, paprika, garlic powder, and onion powder and toss gently to ensure the potatoes are evenly coated with the seasonings and oil.
  • Place the seasoned potatoes in the air fryer basket, ensuring they are spread out evenly.
  • Air fry for 15-20 minutes, shaking the basket halfway through the cooking time. Cooking time may vary depending on the size of the potato cubes and the air fryer model, so keep an eye on them to prevent burning!
  • Once potatoes are golden and crispy, transfer to a serving dish. Enjoy!

Notes

  • What kind of potatoes to use: Yukon gold or russet potatoes are great choices for breakfast potatoes because they have a high starch content. This means that they will have a nice crispy exterior, yet fluffy interior when cooked in the air fryer.
  • Recipe variations: Chopped onions and bell peppers would be delicious additions. Also, topping your potatoes with a sprinkle of parmesan cheese at the end is so good!
  • Cut your potatoes into uniformly sized pieces. This will help to ensure even cooking and optimal crispiness.
  • Don’t crowd the basket. Make sure to leave room around your potatoes so that they can cook evenly and get crispy. You may need to cook your breakfast potatoes in batches to ensure even cooking in the air fryer.
  • Preheat your air fryer. I like to preheat my air fryer for a few minutes before adding the food. This ensures that the proper temperature has been reached and that your potatoes will cook up nice and crispy. 
  • Shake the basket: Make sure to shake the air fryer basket halfway through the cooking time to ensure even browning.
  • Store any leftovers in an airtight container in the fridge for up to four days.
