When it comes to a delicious, hearty breakfast, you just can’t go wrong with a side of these golden brown, crispy potatoes.

They’re made from simple ingredients (just potatoes, oil, and spices) and make a great side dish for nearly any meal; whether it’s for breakfast, brunch, or dinner!

And if you want to make the best breakfast potatoes (or home fries, as some might call them) then cooking them in the air fryer is one of my favorite ways! 

I love cooking just about anything that has a crispy texture in the air fryer. Whether it’s something simple like reheating pizza (yes, it’s the best way!) or making homemade pub style fish and chips, the air fryer is the perfect vessel.

You will use much less oil when air frying your breakfast potatoes than you would deep frying them and the clean up is much easier, too. A win win!

How to Make Crispy Breakfast Potatoes in the Air Fryer – Step by Step

  1. Preheat air fryer to 400 degrees Fahrenheit.
  2. Combine the cubed potatoes with the olive oil and seasonings in a large bowl and mix until well coated.
  3. Spread the potatoes in a single layer in the bottom of the air fryer basket.
  4. Air fry the potatoes for 15-20 minutes, shaking the basket halfway through.

Tips and Notes

  • What kind of potatoes to use: Yukon gold or russet potatoes are great choices for breakfast potatoes because they have a high starch content. This means that they will have a nice crispy exterior, yet fluffy interior when cooked in the air fryer.
  • Recipe variations: Chopped onions and bell peppers would be delicious additions. Also, topping your potatoes with a sprinkle of parmesan cheese at the end is so good!
  • Cut your potatoes into uniformly sized pieces. This will help to ensure even cooking and optimal crispiness.
  • Don’t crowd the basket. Make sure to leave room around your potatoes so that they can cook evenly and get crispy. You may need to cook your breakfast potatoes in batches to ensure even cooking in the air fryer.
  • Preheat your air fryer. I like to preheat my air fryer for a few minutes before adding the food. This ensures that the proper temperature has been reached and that your potatoes will cook up nice and crispy. 
  • Shake the basket: Make sure to shake the air fryer basket halfway through the cooking time to ensure even browning.
  • Store any leftovers in an airtight container in the fridge for up to four days.

Serving Suggestions

These crispy potato bites go perfectly with your traditional breakfast fare of eggs, bacon, sausage, etc. You can also stuff them into breakfast burritos or tacos.

They’re also great for a breakfast or brunch buffet at the holidays served alongside some French Toast Casserole, Cranberry Muffins, or Ham, Egg, and Cheese Casserole.

And while they might wear the name “breakfast potatoes,” they’re the perfect dinner time side dish, too. They taste delicious paired with Grilled Ribeye or Herb Roasted Chicken.

My absolute favorite way to serve these Air Fryer Breakfast Potatoes, though, is with a runny, over easy egg on top with a dash of hot sauce. Swoon!

FAQs

Do I need to peel the potatoes before roasting them in the air fryer?

No, you do not need to peel your potatoes. The peel adds extra texture and flavor. However, you can definitely peel your potatoes for a smoother finish if you prefer them that way!

Can I use frozen potatoes?

I do not recommend using frozen potatoes, as they will release moisture as they cook. For best results and for a crispy texture, stick with fresh potatoes instead.

How can I make sure my potatoes get crispy?

Removing excess moisture from your potatoes can help them to get extra crispy in the air fryer. After you peel and chop the potatoes, dry them off really well with a paper towel before adding the oil and seasonings. Also make sure to shake the basket halfway through the cooking time so that all surfaces of your potatoes are cooked evenly.

Can I use sweet potatoes instead?

Yes, you definitely can. They can be prepared the same way and will cook in the same amount of time, but make sure to peel them first.
