This Air Fryer Zucchini is quick and easy to make and comes out perfectly crispy every time. Fresh zucchini squash is dipped in a seasoned coating and makes the perfect low calorie and gluten-free appetizer or side dish.
3medium sized zucchini squashsliced into 1/2 inch thick rounds
1/4cupolive oil
2Tablespoonslemon juice
1/2teaspoonsalt
1/2teaspoongarlic powder
1/2teaspoononion powder
freshly ground black pepperto taste
Instructions
Preheat your air fryer to 370 degrees Fahrenheit.
Combine the sliced zucchini with the olive oil, lemon juice, garlic powder, onion powder, salt, and pepper in a large mixing bowl. Toss gently to coat.
Spread the zucchini in an even layer in the air fryer. Cook for 8-10 minutes. Flip the zucchini slices halfway through the cooking time to ensure even browning and crispiness.
Serve with fresh lemon wedges and freshly chopped parsley for garnish, if desired.
Notes
Slice the zucchini evenly. For uniform cooking and consistent crispness, make sure to slice the zucchini into similar sizes so that they all cook evenly. I slice mine into rounds, but feel free to cut yours into sticks or wedge shapes as well.
Pat the zucchini dry. After slicing and before adding the seasoning to your zucchini, use a paper towel to pat them dry. Removing excess moisture from the zucchini helps them crisp up better in the air fryer.
Shake the basket a few times. This will help to ensure even cooking and that all surfaces of your zucchini get equally crispy.
Variations: this version uses a super simple seasoning blend, but feel free to cook your zucchini with any other spices or blends you like.
Feel free to omit the lemon juice. I like the brightness that lemon juice adds to roasted veggies (I use it in my Air Fryer Broccoli a lot) but feel free to leave it out; especially if you don't have any on hand.
How to store: Any leftover air fryer zucchini can be stored in an airtight container in the fridge for up to 4 days.
