Loaded Cheesy Potato Casserole

November is finally here!
I’m excited because that means it’s time to start prepping for the holidays. From shopping, meal planning, baking, and everything in between, this time of year is my favorite.
Thanksgiving is only 27 days away, and Christmas isn’t far behind. When it comes to holiday dinners, I prefer to load my plate up with allllll the side dishes. Mac and cheese, green bean casserole, stuffing, deviled eggs, and my favorite: Loaded Cheesy Potato Casserole.
I’ve been making this for Thanksgiving, Christmas, and Easter for many years now. It’s one of those recipes that I always look forward to and is always a standby for us because EVERYONE in my family loves it.
At holiday meals my kids usually like to about a dozen rolls and a maybe a few bites from the fruit tray, but this is one dish they will always eat and that they look forward to, just as much as me!
How to make Loaded Cheesy Potato Casserole – Step by Step
- Preheat oven 350 degrees. Spray a large baking dish (I use a deep 11×7 inch pan) with cooking spray and set aside. Peel potatoes and chop into large, evenly sized pieces.
- Boil potatoes for 15-20 minutes or until soft when pierced with a fork. Drain the potatoes and beat with a mixer until smooth. Add milk, cream cheese, sour cream, parsley, garlic salt, and pepper. Beat at at low speed until nice and creamy.
- Spoon the potatoes into the prepared baking dish. Top with the shredded cheddar cheese and crumbled bacon.
- Cover with foil and bake for 30 minutes. Remove foil and bake for 10 more minutes or until cheese melts. Enjoy!

- 3 pounds Russet potatoes , around 5-6 medium potatoes
- 1/2 cup milk
- 1 (8 ounce) package cream cheese, softened
- 1 cup sour cream
- 2 teaspoons dried parsley
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- fresh ground pepper, to taste
- 1 cup shredded cheddar cheese
- 5 slices bacon, cooked until crisp and crumbled
Instructions
