They aren’t just for making cakes anymore! Cookies, brownies, pancakes, and these Easy Lemon Bars all can be made with the use of a helpful box of cake mix.
Ingredients for Easy Lemon Cheesecake Bars
- lemon cake mix
- 1 egg
- vegetable oil
- cream cheese
- sugar
- lemon juice
How to make Easy Lemon Cheesecake Bars – Step by Step
- Get started by combining the cake mix with the oil and an egg. Reserve about 3/4 cup of the dough to use as crumble topping for the Lemon Bars.
- Press the remainder of the dough into the bottom of a 9×13 pan and bake for about 15 minutes at 350 degrees. Allow it to cool while you get started on the filling.
- Beat the cream cheese, lemon juice, and sugar together until nice and smooth. Spread it evenly over the baked crust.
- Crumble reserved dough over the top of filling and return to oven for 20-25 minutes until baked and filling is set. Allow Lemon Cheesecake Bars to cool completely before slicing.
Tips and Notes
- To make removal and cutting easier, line your baking dish with parchment paper so that it hangs over the edges of the dish before adding the crust and filling. After the bars have baked and cooled completely, lift the bars out with the overhanging parchment paper and place on a cutting board to slice.
- If you would like to lighten up these lemon bars, you can use light cream cheese in place of the regular cream cheese.
- Store leftover Lemon Cheesecake Bars in the refrigerator for 5 to 7 days.

Lemon box cake has an artificial taste to me, so I used a yellow cake mix and added the zest of one large lemon to the mixture. Very easy and delicious.
Oh I almost forgot that instead of 1/2 of vegetable oil, 3 tablespoons was Kirkland fruits/veggies pouch.
So yummy and so easy! I only had 3/4 of 1 package of cream cheese. Used D’vash date sugar and only about 2 1/2 tablespoons of fresh lemon juice. I wish I could eat it all but I’m being good 😆 Thanks for this wonderful recipe! A keeper!
Great recipe as is. I sometimes like to add wild blueberries into the top crumble, great addition.
So good. Thank you
Do you think strawberries instead of blueberries would work?
This is the second time that I have made these with great results. Followed recipe exactly except just slipped in a half T more lemon juice. I have only made these Meyer lemons. I’m just about out of them so next time will have to be Eureka lemons.
