Pineapple Sunshine Cake
Pineapple Sunshine Cake – A light and fluffy pineapple-infused cake, topped with a sweet and creamy whipped cream frosting. This cake is always a crowd pleaser!
Today’s recipe is simple, easy, and delicious, y’all. I wanted to share it with you before the weekend because this would be the perfect, easy addition to your Easter spread.
I got this recipe from one of the lovely ladies I used to work with when we were living in Kansas. Let me tell ya, my midwestern friends are some UH-mazing cooks!
I always say that southern food is my comfort food, but ya know what? Kansas girls… now they know how to make some good food!
I love to make this Sunshine Cake for Easter or summer barbecues and it NEVER lasts for long. When I made it earlier this week, my son snuck a piece from the corner before I was able to photograph it.
He came running to me and said, “Mama! That cake is the best in the whole world!”
It was hard to be mad at him for cake-thievery with a sweet comment like that. He must be learning how to butter me up.

Recipe: Pineapple Sunshine Cake
Ingredients
Cake:
- 1 box yellow cake mix
- 4 eggs
- 1/2 cup oil, (I used vegetable oil)
- 1 (8 oz) can crushed pineapple with juice
Frosting:
- 1 (8 oz) container whipped topping, thawed
- 1 small box instant vanilla pudding
- 1 (8 oz) can crushed pineapple with juice
Instructions
- Preheat oven to 350 degrees. Spray a 9x13 pan with cooking spray.
- In a large bowl, combine cake mix, eggs, oil, and 1 can of crushed pineapple with the juice. Mix well.
- Pour into prepared baking pan and bake for 25-30 minutes, or until toothpick inserted in center of cake comes out clean. Allow to cool completely on a wire rack.
- In a medium sized bowl, fold together whipped topping, box of vanilla pudding, and 1 can crushed pineapple with the juice. Spread over the top of cooled cake. Enjoy!

Hi Anita, since the pineapple adds moisture to the cake, it wouldn’t turn out the same using blueberries or strawberries in its place. I’m glad you enjoyed the cake, though!
Can I substitute Cool Whip with heavy whipping cream?
Hi Laura, if you make your own whipped cream from the heavy whipping cream you most definitely can.
Wonderful cake. I took a small can of pineapple juice (6oz) can and poked small holes in cake and poured about 3-4 oz on cake then frosted. Fixing another one today. Didn’t last long. Would like to know if you can use sugar free pudding mix in frosting

This recipe sounds so good, Iโve picked it for my Birthday this year. My question is could the cake be made a few days earlier and frozen? Then frost it once the cake is thawed .

Turned out good but next time I will put chopped nuts or more pineapple on top of frosting as u said. Easy to make.
Iโm going to make this cake for a group of friends. The recipe calls for 8oz pineapple but all other recipes call for 20 ozs. ย Just want to make sure the correct amount is 8oz before I go and ruin the cake and embarrass myself.ย

Re: the frosting….. Is the pudding mix prepared, then folded into the topping, or is the pudding powder folded into the topping?
The pudding powder is folded into the whipped topping; you don’t need to prepare the pudding first.

I really felt sorry for my husband when it was all gone!
Becca I used pinnaple chunks but I cut them up an put the juice an crushed up 3 bananas that can’t be the reason
They’re only e 4 eggs veg oil. Crushed pineapples w/ juice.. But I only had pineapple chunks but I cut them up small an I added 3 banana s I smashed them up I don’t think that made any difference so why didn’t mine rise high
Hi Mary, adding in 3 bananas will definitely add a lot of moisture to the cake, which can then effect how high it rises and also its texture. I’d recommend leaving those out and following the recipe for better results next time.
