I’ve been known to get up early and also stay up late to catch a great price on something I’m hankering after. This could in order to get a new bike for my kiddos on Black Friday, or also waiting in an online, virtual queue for a chance to spend way more than I should at the Lilly Pulitzer sale twice a year. Any other Lilly lovers out there?? You know what I’m talking about… 😉
When you love something and it suddenly goes on sale, doesn’t it feel like a sign that you should BUY it?! That happened to my husband last week at the grocery store. We joke that he shouldn’t be allowed to go grocery shopping by himself because he will always come home with strange items, and it seems like most of those are in bulk. When we were living in Hawaii, this usually consisted of odd fruits and vegetables. Ever eaten a rambutan? Or jackfruit? Or young coconuts? We have.
Anyway, I digress, so let’s get back to the sale. My husband called me because our store was having a huge sale on meat and he was so excited! Steaks, rib roasts, and also pork butts were discounted. He said he had filled up the cart and to prepare the deep freezer for his haul.As much as I tease him about his grocery store antics, I will say I was pretty excited about all of the good priced meat he brought home. The discounted pork butt he picked up is what ultimately led to the creation of these Chipotle Pork Carnitas Burrito Bowls!
I’ve been making these Chipotle Pork Carnitas for awhile now, and the recipe for the meat is already here on my site, too. We usually eat them as tacos with corn tortillas, but this time I decided to make them into burrito bowls with rice and homemade pico de gallo.
If I have extra time, I like to make cilantro lime rice, but otherwise I just use regular white or brown rice. I serve mine topped with some chopped romaine lettuce, sour cream, avocado, fresh lime juice, and cilantro. This Creamy and Spicy Chipotle Sauce is also a delicious topping option. However you choose to dress yours up, I know you’ll love it!
Recipe: Chipotle Pork Carnitas Burrito Bowls
Ingredients
- Slow Cooker Pork Carnitas recipe
- Cooked white rice
Pico de gallo:
- 2 Roma tomatoes, chopped
- 1 small jalapeño, seeded and diced (use gloves for this!)
- 3 Tablespoons chopped green onions
- 1/4 cup chopped cilantro
- Juice from 1 large lime
- 1/4 teaspoon salt
Toppings:
- shredded romaine lettuce
- sliced avocado
- sour cream
- chopped cilantro
- fresh squeezed lime juice
Instructions
- Prepare pork carnitas according to directions HERE.
- To make pico de gallo, combine tomatoes, jalapeño, green onions, cilantro, lime juice, and salt in a small bowl. Refrigerate until ready to use.
- To serve, place 2/3 cup rice in each bowl, then top with 3/4 cup cooked pork carnitas. Spoon homemade pico de gallo over the top, then finally add any additional desired toppings.
