Crockpot Poppy Seed Chicken is the ultimate comfort food! Only a handful of ingredients is needed to make this simple, family favorite meal, and preparation couldn’t be easier thanks to your slow cooker.
Crockpot dinners are a weekly standby at our house. This Poppy Seed Chicken is a regular now along with family favorites like Mississippi Pot Roast, Cilantro Lime Chicken Tacos, and Cheesy Crockpot Tortellini.
We’ve been ringing in the new year with lots of cold weather and lower temperatures than I would personally like.
But when it’s chilly outside, I like to warm up inside with cozy, comforting dinners that my kids and husband love. On Poppy Seed Chicken nights, everyone at the table walks away with a clean plate award, and I walk away happy that I spent a total of 5 minutes making dinner!
Ingredients for Crockpot Poppy Seed Chicken
- chicken breasts
- cream of chicken soup
- sour cream
- chicken broth
- poppy seeds
- butter
- Ritz crackers
How to Make Poppy Seed Chicken in the Crockpot – Step by Step
- Place chicken breasts into the bowl of your crockpot. Whisk together the cream of chicken soup, sour cream, and chicken broth, then spread over the top of the chicken. Place the lid on the crockpot and cook over low heat for 5-6 hours, or high heat for 3-4 hours (mine is done at 3 hours on high using thawed chicken).
- When cooking time is complete, remove lid and shred the chicken with two forks, then mix in the poppy seeds.
- Combine the melted butter and crushed crackers, then sprinkle over the top of the chicken.
- Heat the oven to 375 degrees. Remove the the ceramic bowl of the crockpot and place in the oven for 7-10 minutes to help crisp up the cracker topping.
- Serve over rice or mashed potatoes and enjoy!
Tips and Notes for making Poppy Seed Chicken
Can I use frozen chicken?
Yes! I use frozen chicken all the time. You may need to add up to an hour of cooking time if using frozen chicken breasts, but mine are usually finished around the same time, 3-4 hours on high or 5 hours on low.
I don’t have a crockpot. Can I make this in the oven?
Yes, but you will need to cook your chicken breasts beforehand and shred them. You can cook your chicken breasts by placing them in boiling water for about 15 minutes or until no longer pink in the center. Remove from the water and shred with two forks. Then mix the chicken with the soup, sour cream, and poppy seeds, spread into a greased 9×13 baking dish, and top with the Ritz crackers/butter mixture. Bake at 350 degrees Fahrenheit for 30 minutes.
