Pineapple Sunshine Cake
Pineapple Sunshine Cake – A light and fluffy pineapple-infused cake, topped with a sweet and creamy whipped cream frosting. This cake is always a crowd pleaser!
Today’s recipe is simple, easy, and delicious, y’all. I wanted to share it with you before the weekend because this would be the perfect, easy addition to your Easter spread.
I got this recipe from one of the lovely ladies I used to work with when we were living in Kansas. Let me tell ya, my midwestern friends are some UH-mazing cooks!
I always say that southern food is my comfort food, but ya know what? Kansas girls… now they know how to make some good food!
I love to make this Sunshine Cake for Easter or summer barbecues and it NEVER lasts for long. When I made it earlier this week, my son snuck a piece from the corner before I was able to photograph it.
He came running to me and said, “Mama! That cake is the best in the whole world!”
It was hard to be mad at him for cake-thievery with a sweet comment like that. He must be learning how to butter me up.

Recipe: Pineapple Sunshine Cake
Ingredients
Cake:
- 1 box yellow cake mix
- 4 eggs
- 1/2 cup oil, (I used vegetable oil)
- 1 (8 oz) can crushed pineapple with juice
Frosting:
- 1 (8 oz) container whipped topping, thawed
- 1 small box instant vanilla pudding
- 1 (8 oz) can crushed pineapple with juice
Instructions
- Preheat oven to 350 degrees. Spray a 9x13 pan with cooking spray.
- In a large bowl, combine cake mix, eggs, oil, and 1 can of crushed pineapple with the juice. Mix well.
- Pour into prepared baking pan and bake for 25-30 minutes, or until toothpick inserted in center of cake comes out clean. Allow to cool completely on a wire rack.
- In a medium sized bowl, fold together whipped topping, box of vanilla pudding, and 1 can crushed pineapple with the juice. Spread over the top of cooled cake. Enjoy!

I usually do because of the Cool Whip.
This is so good! I add my own twist by topping it with toasted coconut and macadamia nuts too! YUMMY!
I’m making this for the first time. What im doing differently is i added half a cup of pineapple juice along with the 1 can of crushed pineapples. Also for the frosting, im using heavy cream, vanilla pudding and powdered sugar along with the crushed pineapples. Will update tomorrow on how it came out. If it wasnt a birthday cake for my mom, id be eating it as soon as it was done.

This is my first time making this cake. The cake was a little dry. I only baked it for 22 minutes. The frosting was amazing. I would make it again. Maybe use a different cake mix. I used Betty Crocker xtra moist yellow.
We made this this past weekend and it was so yummy – didnt have any issues with it being dry was super moist. However we followed her instructions for the cake recipe of 4 eggs and 1/2 cup oil which was different than the cake instructions on the box. Did you follow her instructions or the box mix instructions? Try hers if you didnt.
This saved me! I had all of the ingredients and with the pandemic didn’t know what to make for Easter. Google the items I had and found this recipe ❤️ I did it almost like a pineapple upside down cake and used a spring pan…used the topping for a side ❤️

Made with Pineapple Supreme Cake Mix. I added coconut and chopped maraschino cherries to batter. Oh it was just delicious! My in laws asked me to make them one “to go”.Thank You for such a yummy dessert.
Do you prepare the vanilla pudding or just add the dry mix into the whipped cream?

I like to poke holes in the baked cake with the end of a wooden spoon before I put the frosting on – it lets it sink in and really gets the cake moist ♥️
So easy to make! Sweet but not rich…its a refreshing dessert! This is my go to favorite!
