Warm up after a long day with this easy and delicious Crockpot Cheeseburger Soup, made with plenty of real food ingredients. It’s pure winter time comfort food that your whole family will love.
Did that arctic blast hit your neck of the woods last week? By the looks of my Facebook newsfeed, it seemed like my pals on the mainland were definitely pulling out their boots and warm coats! I hope you’re all staying warm and not battling too much snow yet. And to help make all of that blustery weather a little easier to handle, I have a crockpot soup recipe for y’all today. A couple of weeks ago, Carrie from Kenarry Ideas For the Home was here sharing her recipe for Slow Cooker Loaded Potato Soup as part of our monthly recipe exchange. While she was here, I was over on her blog sharing this recipe for Crockpot Cheeseburger Soup. I decided to bring it here to y’all today, just in time for those chilly temps!
Soup is one of my favorite ways to warm up when the weather gets cooler, and when I can make it up in the slow cooker? Even better! I’ve spent some time tweaking this recipe to get it just right, mostly to include more real food ingredients. I’ve tried a few different cheeseburger soups, but have always felt so funny adding in processed cheese with all of those good-for-you veggies. I feel like this soup has just as creamy and cheesy of a texture as any of the others, and it’s better for you!
I’ve got to share a little story about my hubby with y’all real quick. Now he is not much of a cook, unless it’s on the grill or the Big Green Egg. That man can smoke some delicious pulled pork, and that is a fact! Anything else though, and it’s cause to worry about the kitchen getting lit on fire. The day I prepared this Cheeseburger Soup, I had a friend’s event to attend, and I knew I would have to leave my hubby in charge of the final steps. They’re pretty easy and straightforward (i.e. stir together flour and milk, dump into crockpot, add cheese, cook 10 more minutes…) but I was still a little concerned. When these situations have arisen in the past, he usually calls to ask me a couple of questions. So this time when I heard my phone ringing, I knew it was either the soup or the kids, since I had left him in charge of both. But it was a good phone call, just letting me know that he and the kids were loving the soup! All was well.
Hope you’re all staying warm where you are! And y’all don’t have to worry about me, it’s always warm out here in the Aloha state. But actually I’d really love to trade with someone for maybe a week or so. I could totally go for a fall vacation of crunchy leaves, boots, and cardigans. I bet plenty of y’all would love a week in Hawaii, but I know airfare can be pretty expensive. So in the meantime, just grab a bowl of Cheeseburger Soup fresh from your crockpot and I bet it’ll warm you right up. Even without the palm trees. 😉
