Bacon, Egg, and Avocado Breakfast Sandwich

Do you have a unique food that you crave?

We all probably have those typical cravings for chocolate, or a big, juicy cheeseburger, but do you ever crave something a little unconventional? You know, like a pregnant lady who needs a jar of dill pickles, and needs them STAT? 🙂 Well, that’s how my little love affair with avocados began, and how this Bacon, Egg, and Avocado Breakfast Sandwich came to be.

I never really craved anything in particular when I was pregnant with my son, who is now almost four. I remember eating a lot of cereal, mostly because the milk seemed to help my terrible heartburn, but that’s really about it. Well, and ice cream. I did enjoy my fair share of ice cream. 🙂

But with my daughter who is now almost eight months old, I craved very specific and kinda weird things! I remember when I was about six months pregnant with her, I had the strongest craving for movie theatre popcorn. Nope, the microwave kind just would not do the trick. I needed the perfectly buttery and salty kind that you pay way too much for at the movies. My crazy craving started right around Mother’s Day, so my husband went out and got me a huge bag of popcorn, M&Ms, and a big fountain Coke from the movie theatre as a surprise treat from him and my son. Then he even let me pick out whatever movie I wanted to rent and watch that day, which in itself is a HUGE deal. I picked the new Twilight movie, of course. 😉 Honestly, I think it was the best and sweetest Mother’s Day present ever.

In addition to my popcorn cravings, I also developed a strong desire to eat avocados with nearly every meal. Those cravings seemed to come once we moved here to Hawaii where avocado trees are a common sight. We had only been here a few weeks when I tried a BLT with avocado at a local burger restaurant and was hooked! I now had plenty of ways to eat avocado for lunch and dinner, but I needed it in the a.m. too! So, I decided to make a breakfast version of a BLT and add some avocado to it. And breakfast has been a wonderful reason to get out of bed ever since. 🙂

When it was time for our daughter to start solids, I really wanted to offer her avocado as her first food. It seemed fitting since it was what I craved most when I was pregnant with her, and I just KNEW she was going to love it! I was so wrong, haha! She thought it was pretty unappetizing that first time, but now she’s starting to come around. 🙂

Maybe someday when she can have it combined with bacon, egg, and some cheddar cheese she’ll change her tune for good? I sure hope so, and I hope you love it, too!

Bacon, Egg, and Avocado Breakfast Sandwich

Start your day off right with a Bacon, Egg, and Avocado Breakfast Sandwich! It's filling, flavorful, and delicious!

Ingredients

  • 2 strips of bacon, cooked till crispy
  • 1 slice of cheddar cheese
  • 1/2 of an avocado
  • 1 egg, cooked over easy
  • 2 slices of bread,, or a roll sliced in half (I used a Torta roll from Costco)
  • salt and pepper to taste

Instructions

  • Mash about 1/2 of the avocado with a fork and spread on both slices of bread. This acts as a glue and helps to hold everything together. Slice the remaining avocado into chunks.
  • Layer the egg, cheese, and bacon on top of the mashed avocado on one slice of bread. Top with the avocado chunks. Season to taste with salt and pepper. Top with second slice of bread and enjoy!

    I hesitated to even click on this post because I knew it was going to make me so hungry. I am officially starving now! This looks delish! My husband makes the best egg sandwiches. I am going to ask him to throw avocado on there next time. Love it!

    I love avocados too and I find the story about your daughter not liking them really funny as I also have a little daughter who has always completely refused to eat them. Maybe she’ll come round to them eventually too.

      Maybe they’ll enjoy it once we add a little salt and garlic and give them some tortilla chips to dip?! My four year old saw me feeding her avocado the other day and he said, “I don’t like avocado.” And I said, “Yes you do! You love guacamole and that’s made from avocados.” He looked at me like I had two heads! Haha! Hopefully these girls will change their tune one day!
