Egg-free, Dairy-free Chocolate Cake

My oldest daughter is allergic to everything. And I mean everything. Wheat, milk, eggs, tree nuts and peanuts. As you can imagine, it is difficult to feed this child. I am always on the lookout for allergy-friendly foods.
Do you have allergies or food intolerances, too? If you are gluten-free, I’m afraid this recipe won’t help you. But if you are dairy and egg-free, then this is just the ticket! (This recipe may work with gluten-free flour, but I have never tried it).
I must tell you that I am not a cake lover. If I am going to appease a sugar craving, I am going to do it with cookies or brownies–not with cake. But this cake is different. I actually like it better than any other cake I have made–especially the boxed cake mixes.
What’s the secret to this cake? Hot water. I know it seems strange, but it totally works! The cake is dense and delicious. Just top it with some chocolate frosting or a dusting of powdered sugar and you have a fantastic cake for any occasion.

Recipe: Egg-free, Dairy-free Chocolate Cake
Ingredients
- 3 cups all purpose flour
- 2 cups sugar
- 1/2 cup cocoa
- 2 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup oil
- 2 Tablespoon white vinegar
- 1 teaspoon vanilla
- 2 cups hot water
Instructions
- Preheat oven to 350 degrees.
- Mix dry ingredients in a large bowl.
- Add wet ingredients and mix.
- Stir in hot water and mix well.
- Pour into a greased 9x13 pan and bake for 30-40 minutes, until a toothpick comes out with just a few crumbs.

On another note, have you heard of Intestinal permeability? Thats the scientific/doc term for it, but most people refer to it as leaky-gut syndrome.
A lot of parents are finding that their children’s(and their own!) allergies are actually are actually caused by this! They have found that by changing their diet for a period of time, usually to a “healing” diet(usually the GAPS diet or an “autoimmune” one), that they can greatly reduce their allergies and even in some cases get rid of them all together!
I’m going to try it out for me and my daughter, since I have the same allergies, just a bit less extreme than my daughters. The diet isn’t a radical dangerous one either, so it couldn’t hurt to try!
I will have to look into this. My son is allergic to peanuts and would love to help with his allergy. Like you said, definitely can’t hurt to try!
Have you heard of the Medical Medium book by Anthony William? Itโs so informative and he discusses leaky gut syndrome and how to finally heal from all chronic illnesses and diseases. Gwenyth Paltrow swears by him as does Robert De Niro, Doctors and so many more! He was on EXTRA the other night talking with Mario Lopez. Pls get his book it will bring so much healing and true understanding of these illnesses and causes.
Also forgot to mention Iโm definitely going to make this cake but Iโll try either coconut flour or the gluten free one ny Bobโs Mill that you recommend.
Can you use coffee instead of hot water if there is no allergy??

I just prepared this recipe with coconut flour and palm sugar…had to add a lot more water. I hope it turns our ok!!!

Hi Jessica! You could cut the ingredients in half and prepare the same way. I’d bake it in an 8×8 inch pan probably. Hope that helps!
What if I am trying to stay away from wheat flour?
Hi Corina! You could try it with a gluten-free all purpose flour. I’ve used the kind from Bob’s Red Mill in other recipes with good results.

Fantastic recipe! I changed it up slightly one time that I made it. I replaced the hot water with fresh strong brewed hot coffee. Turned out super delicious!!

I made these into cupcakes and plan to top with coconut whipped cream! Baked at 350 for 16-18 min!
