Skinny Broccoli Salad
This lightened up Skinny Broccoli Salad gets a delicious crunch from the sunflower kernels and crisp broccoli, with a delicious healthy dressing made from Greek yogurt!
So after my post from the other day for that amazingly decadent Chocolate Chip Cookie Cheesecake Pie, I figured a lighter recipe was in order.
I love Broccoli Salad. With such a healthy main ingredient, it only seems right that it be given an equally nutritious dressing to coat it in. Replacing the mayo with plain Greek yogurt bumps up the protein, yet cuts back on the unhealthy fats and calories. Plus, it tastes just as delicious!
I made this to go alongside some Ranch Turkey Burgers for dinner. It was a great Friday night, summer meal. All that was missing was a glass of Sangria. Recipe for that might be coming soon. 🙂
We are looking forward to having family come and visit us from the mainland in a couple of days. My son is so excited and keeps asking everyday if it’s time to go pick up his auntie. We are excited for our daughter to meet her auntie for the first time! Hawaii is a beautiful place to be stationed and we do love it here, but the distance is definitely a downside. But at least it’s a fun place to visit; when family can save up the funds. 🙂

Recipe: Skinny Broccoli Salad
Ingredients
- 1 medium head of broccoli,, chopped into small pieces
- 1/4 cup red onion,, diced
- 1/4 cup sunflower kernels
- 1/4 cup raisins,, or 1 (1 oz) box
- 1/2 cup plain Greek yogurt
- 1 TB sugar
- 1 1/2 TB white vinegar
- 3-4 slices bacon,, cooked crisp and crumbled
Instructions
- Combine broccoli, sunflower kernels, raisins, and bacon in a large bowl. Set aside.
- Stir together Greek yogurt, sugar, and vinegar in a small bowl. Pour over the top of broccoli mixture and stir evenly to coat.
- Tastes great when served immediately. If you need to refrigerate it for later, you may want to prepare a bit more of the dressing to add in case it gets a little dry.
I made this with craisins (because i have a huge bag from costco!), Splenda and turkey bacon! So good! Sunflower seeds would have been a great addition!

My question is, what is the amount of your serving size. One cup,1/2 cup, I didn’t see any serving size or the stats on your serving size. Thank you for your recipie.
HI Susan! That’s a great question. I would say 1/2 cup would be about the correct serving size. Unfortunately I didn’t measure it all out to see how many servings one recipe makes. The next time I make this I will for sure do that and update the recipe. I would think it would make around 5 servings, each 1/2 a cup, if I were to estimate!
i love this salad! I have made it twice. Last time it was on the Fourth of July for the family picnic. Both times I used turkey bacon. The first time I used regular plain vanilla yogurt. The second time I used the Greek kind. I like the regular better as the Greek made it too thick (imho). The recipe is a keeper anyone figure out the nutritional value yet?

This recipe is awesome! Just a couple thoughts. I used craisins instead of the raisins, added some chopped red and yellow peppers, and substituted stevia for the sugar. I refrigerated the leftovers and brought it out again today. It was even better today after all the flavors combined. I will always make it a day a head of time now. Wonderful recipe!

I just made this & it is so good! I used green onions because I didn’t have any red & I substituted agave nectar for sugar and fake bacon for the real stuff (because I’m a vegetarian). Even with those changes, I thought it was delicious. I will definitely be making this again! Thanks!

Do you eat it raw? (kind of a newbie in the veggie world). Not sure that would be my thing. How about a short steaming? Do you think that would work?

Hi Beth! I’d say this yields about 5 servings. I just calculated using MyFitnessPal and got 164 calories each for 5 servings. If you made the servings smaller and had 6, it would be 136 calories each. Hope that helps! ๐

Hi Sarah! No need to blanch the broccoli beforehand. Although you could do that if you like your broccoli a little softer. I just mix mine in raw. ๐
I love broccoli salad and this recipe is my go to…thank you! I use apple cider vinegar and add a little adobo to give it a little kick. I do blanch my broccoli though bc we like it slightly tender. Love that you can easily modify this recipe to your taste while keeping calories down!

I chop my broccoli up and put in a strainer and pour boiling water over it itโs amazing how it changes the colour! This salad is delicious!

I used the citrus vinaigrette dressing because my family is not a fan of mayo. I did not have any Greek yogurt on hand so I substituted. I family liked it.
