These Turkey Cranberry Sliders are my favorite way to use up leftover Thanksgiving turkey! Sweet Hawaiian rolls are topped with leftover turkey, melty cheese, and cranberry sauce, then coated in a dijon mustard butter sauce. They are incredibly delicious and quick and easy to make, too!

One of the best things about Thanksgiving dinner, in my opinion, is all the leftovers you have to look forward to afterwards. And when I have leftover holiday turkey, I love to make Cranberry Turkey Sliders!

These are like delicious mini turkey sandwiches with a Thanksgiving flair. You’ll start with layers of turkey and cranberry sauce on top of Hawaiian rolls. You can even add some stuffing in there, too! Finish them off with melty cheese and a buttery sauce before baking and you have a yummy and easy dinner.

I made these turkey sliders with leftover crockpot turkey breast, which is my favorite way to cook turkey. It comes out so juicy every time!  

And as a side note, if you’re not a fan of cranberry sauce, then you can leave it out. However, I find that pairing the roasted turkey with a bit of tart cranberry sauce makes for a really satisfying combo. If you’ve never tried it before, you should. It’s so good!

Ingredients for Leftover Turkey Cranberry Sliders

  • Hawaiian sweet rolls – you will need a package of 12 Hawaiian rolls. You don’t need to separate them; keep them all together and then slice them horizontally.
  • Turkey – I like to use leftover holiday turkey when I have it, but you can also use regular deli turkey. You will need about 10-12 ounces total of meat.
  • Cranberry sauce – I recommend using whole cranberry sauce, not the jellied kind. Jellied cranberry sauce melts and doesn’t hold together well. You can use either canned or homemade leftover cranberry sauce; both will work great.
  • Cheese – you can use your favorite cheese, but I personally  love provolone, swiss, or havarti cheese. 
  • Butter – you will need a little less than a full stick of unsalted butter for the delicious sauce that goes on top of the turkey sliders.
  • Dijon mustard and Worcestershire sauce – both add so much delicious depth of flavor to the sauce.
  • Dried minced onion and Poppy seeds – used for seasoning the butter sauce.

How to Make Delicious Turkey Cranberry Sliders – Step by Step

Step 1: Spray a 13 x 9 inch baking pan with nonstick cooking spray. Without separating them, cut the entire slab of rolls in half lengthwise using a bread knife. Place the bottom layer in the prepared baking dish.

2: Layer the sliced turkey meat over the top, followed by the cranberry sauce.

Step 3: Add the slices of provolone cheese. Finally place the top layer of rolls back on top.

4: In a small bowl, mix together the melted butter, dijon mustard, Worcestershire sauce, poppy seeds, and dried minced onion.

Step 5: Pour the butter mixture over the top of the buns and use a pastry brush to spread the butter and seasonings evenly over the top.

6: Cover the pan with aluminum foil and bake for 15-20 minutes at 350 degrees Fahrenheit . Remove the foil and bake for 3-5 more minutes, uncovered, until the tops of the rolls are golden brown.

Tips and Notes

  • Use ham instead of turkey. This recipe also works perfectly for leftover ham or even roast beef!
  • Use whole berry cranberry sauce. Canned or homemade is fine, just try to avoid using jellied cranberry sauce. It melts and doesn’t hold shape well when the sliders are baked.
  • Add some stuffing. If you have leftover stuffing, you can add a layer to the sliders! Add it either before or after you add the cranberry sauce; just make sure the sliced cheese is the last layer.
  • Store any leftover turkey sliders in an airtight container in the fridge for up to three days.

  • 6 slices of cheese, provolone, havarti, or swiss
  • 6 Tablespoons unsalted butter, melted
  • 1/2 Tablespoon dijon mustard
  • 2 teaspoons dried minced onion
  • 1 teaspoon poppy seeds
  • 1 teaspoon Worcestershire sauce
