Beef and Noodles with Leftover Mississippi Pot Roast
These Beef and Noodles are made with incredibly delicious leftover Mississippi Pot Roast. They are quick and easy to make, and have become my family’s favorite way to use up leftover pot roast!

It’s simple, delicious, and easy enough for ANYONE to make! My 8 year old puts it together in the crockpot for me all the time! Gotta start ’em young, I say!????

My mom has been here in Texas visiting us for the past few weeks and one night we were trying to come up with ideas for a quick dinner. We had leftover Mississippi roast in the fridge, and my mom mentioned that my Grandma used to always use leftover roasts to make beef and noodles. She said she bet it would be amazing made with the Mississippi roast since it’s so flavorful, so we gave it a shot.
Boy, am I glad we did! It’s so good!

Recipe: Beef and Noodles {with Leftover Mississippi Pot Roast}
Ingredients
- 4 cups beef broth , (I use low sodium)
- 2 cups water
- 12 oz uncooked egg noodles
- 3 cups leftover Mississippi Pot Roast
- chopped fresh parsley for garnish,, optional
Instructions
- In a large soup pot, combine the beef broth and water and bring to a boil. Add the egg noodles and cook according to package directions. Drain the noodles and return them to the soup pot.
- While the noodles are cooking, warm up the leftover Mississippi Pot Roast and its juices in the microwave, or in a separate pot on the stove. Shred meat really well with two forks.
- Add the meat and its juices to the warm, cooked noodles and stir everything carefully, evenly disturbing the meat. Add more or less meat or juice to get the consistency to your liking, but this amount has worked well for me. Serve and sprinkle each bowl with chopped parsley, if you wish. You can even serve this over mashed potatoes! Yum!

I think draining 4 cups of beef broth away wasteful. would bullion cube work?

Oh wow! Wonderful dish. I must admit that I did add mushrooms, onions, and garlic which I sauted in a bit of butter then added to the pot roast and it’s sauce. It was a true success!
There is only my husband and I so I make the missippi roast one day and next day make your beef and noodles. Certainly an absolutely excellent way to use the leftovers and soooo flavorful! Thank you.

A great idea to use leftover pot roast, My whole family loves it!
This was very good, I used it as a starting point, I added mushrooms, and garlic and made a thick sauce from beef broth and onions. I will make this again,
My husband can be really picky about his roast beef. He made a Pot Roast about 2 days before I found this recipe. Because he is Portuguese background, he likes spicy flavors. I followed this recipe to a T until he ask where is the garlic, onion and mushrooms? So I added these and this turned out to be fantastic and it was great accompanied by Homemade Artisan Bread. GREAT DINNER!
