Beef and Noodles with Leftover Mississippi Pot Roast
These Beef and Noodles are made with incredibly delicious leftover Mississippi Pot Roast. They are quick and easy to make, and have become my family’s favorite way to use up leftover pot roast!

It’s simple, delicious, and easy enough for ANYONE to make! My 8 year old puts it together in the crockpot for me all the time! Gotta start ’em young, I say!????

My mom has been here in Texas visiting us for the past few weeks and one night we were trying to come up with ideas for a quick dinner. We had leftover Mississippi roast in the fridge, and my mom mentioned that my Grandma used to always use leftover roasts to make beef and noodles. She said she bet it would be amazing made with the Mississippi roast since it’s so flavorful, so we gave it a shot.
Boy, am I glad we did! It’s so good!

Beef and Noodles {with Leftover Mississippi Pot Roast}
Ingredients
- 4 cups beef broth , (I use low sodium)
- 2 cups water
- 12 oz uncooked egg noodles
- 3 cups leftover Mississippi Pot Roast
- chopped fresh parsley for garnish,, optional
Instructions
- In a large soup pot, combine the beef broth and water and bring to a boil. Add the egg noodles and cook according to package directions. Drain the noodles and return them to the soup pot.
- While the noodles are cooking, warm up the leftover Mississippi Pot Roast and its juices in the microwave, or in a separate pot on the stove. Shred meat really well with two forks.
- Add the meat and its juices to the warm, cooked noodles and stir everything carefully, evenly disturbing the meat. Add more or less meat or juice to get the consistency to your liking, but this amount has worked well for me. Serve and sprinkle each bowl with chopped parsley, if you wish. You can even serve this over mashed potatoes! Yum!

A great idea to use leftover pot roast, My whole family loves it!
This was very good, I used it as a starting point, I added mushrooms, and garlic and made a thick sauce from beef broth and onions. I will make this again,
My husband can be really picky about his roast beef. He made a Pot Roast about 2 days before I found this recipe. Because he is Portuguese background, he likes spicy flavors. I followed this recipe to a T until he ask where is the garlic, onion and mushrooms? So I added these and this turned out to be fantastic and it was great accompanied by Homemade Artisan Bread. GREAT DINNER!

As this recipe has it it was kind of bland. I cooked the pasta in the broth, and added mushrooms, garlic, and onion. I did not strain it , Instead i added the meat and warmed it up that way. Then added a little bit of thyme. By the time I had done all of this the broth had reduced quite a bit. If it hadn’t I was prepared to mix up a cornstarch water slurry to thicken. All that helped quite a bit but next time I’ll play with the spices even more.
I’m right with you on your adds to this great way to use left over beef. I didn’t have enough of anything but beef left !
I don’t know about cookie g down 6 cups of liquid….But need gravy more than broth. Thanks for sharing you also tried to use this way;gives me confidence to try too.

I make noodles similar to this, except I do not boil them in any water or drain them. I use only beef broth, and I let the noodles absorb the broth entirely. This results in them having a “sauce” of sorts (i.e. the evaporated broth and the starch from the noodles) and it is tasty! I am going to try it with Mississippi Roast leftovers- YUM!!!
