Beef and Noodles with Leftover Mississippi Pot Roast
These Beef and Noodles are made with incredibly delicious leftover Mississippi Pot Roast. They are quick and easy to make, and have become my family’s favorite way to use up leftover pot roast!

It’s simple, delicious, and easy enough for ANYONE to make! My 8 year old puts it together in the crockpot for me all the time! Gotta start ’em young, I say!????

My mom has been here in Texas visiting us for the past few weeks and one night we were trying to come up with ideas for a quick dinner. We had leftover Mississippi roast in the fridge, and my mom mentioned that my Grandma used to always use leftover roasts to make beef and noodles. She said she bet it would be amazing made with the Mississippi roast since it’s so flavorful, so we gave it a shot.
Boy, am I glad we did! It’s so good!

Recipe: Beef and Noodles {with Leftover Mississippi Pot Roast}
Ingredients
- 4 cups beef broth , (I use low sodium)
- 2 cups water
- 12 oz uncooked egg noodles
- 3 cups leftover Mississippi Pot Roast
- chopped fresh parsley for garnish,, optional
Instructions
- In a large soup pot, combine the beef broth and water and bring to a boil. Add the egg noodles and cook according to package directions. Drain the noodles and return them to the soup pot.
- While the noodles are cooking, warm up the leftover Mississippi Pot Roast and its juices in the microwave, or in a separate pot on the stove. Shred meat really well with two forks.
- Add the meat and its juices to the warm, cooked noodles and stir everything carefully, evenly disturbing the meat. Add more or less meat or juice to get the consistency to your liking, but this amount has worked well for me. Serve and sprinkle each bowl with chopped parsley, if you wish. You can even serve this over mashed potatoes! Yum!
I made both the Mississippi Crock Pot Roast and Beef and Noodles with the left over and both are delicious- will be making again and again!
Made the pot roast on Monday then flipped the leftovers into this recipe.
Since I use the juices to make a gravy I do this a little differently.
I add the roast to a pot and add a c of water to it and simmer to get moisture back into the meat, reheat it and shred it. I add a c of frozen peas as well.
Because this can be salty I boil the noodles in just water with a little salt.
While the noodles are boiling, I add the leftover gravy to the simmering meat & stir. When noodles are done and drained I toss everything together and VIOLA!
I had to tell my son not to eat it all! Leave me some lunch for tomorrow PLEASE! 😃
Looking for a recipe to use with leftover roast beef.
YUM!!!!! I cooked onions and garlic in butter, added a splash of red wine. After wine cooked down a bit, added pot roast and some noodles with leftover gravy I had. delicious!!!! Will be making again.
I do noodles with your original Mississippi pot roast recipe! It is absolutely amazing. I don’t add any extra beef broth. The family loves it. It’s amazing!
Great recipe! I used Rotini noodles, a jar of prepared brown gravy and frozen mixed veggies. I only added a couple tablespoons of the original meat juice. Will be making this again! Thank You
Way too salty
Use the salt free beef bouillon packs instead of the containers of beef broth.
We love, love the pot roast recipe. I am so excited to see this recipe for using the leftovers with yummy butter noodles. My only comment is cooking the noodles in 4 cups of beef broth and then throwing it all away. What a waste of expensive beef broth…otherwise, a delicious next day meal.
Try using bouillon beef cubes or the salt free packs of beef bouillon both are less wasteful than the containers of broth.
