These Birds Nest Cookies are the easiest Easter dessert ever. They’re made with just four ingredients, take less than 10 minutes to prepare, and are insanely delicious!

My older sisters used to make a version of these for us when we were growing up. They were called “Haystack Cookies,” and my younger brother and I could easily put away an entire batch between the two of us. These days, I love making them with my own kiddos and I know you’ll love making them, too!

These are perfect for rounding out an Easter spread of Maple Glazed Ham, Smothered Green Beans, and some Tangy Deviled Eggs!

To make this recipe, you will be shaping your cookies into nest shapes and adding some festive speckled egg candies to the top, hence the name Birds Nest Cookies. To create the sticks for your nests, you’ll coat chow mein noodles with a mixture of melted chocolate chips and butterscotch chips.

The hardest part of making these no bake cookies is waiting for the chocolate to dry and the cookies to set. Trust me, you’ll want to dig in right away!

How to Make Birds Nest Cookies – Step by Step

A full list of ingredients, measurements, and instructions are located in the recipe card below.

  1. Melt together the milk chocolate chips and butterscotch chips in a large bowl.
  2. Gently fold in the chow mein noodles.
  3. Scoop small portions into a muffin tin.
  4. Create a recess in each cookie and add candy eggs on top. Allow to fully set.

Tips and Notes

  • Line your muffin tin with cupcake liners or use a silicone muffin pan. This will make it easier to remove your Birds Nest Cookies once they’re fully set.
  • I like to use either Whoppers Candy Eggs or Cadbury Mini Eggs for decorating. You could buy a couple of bags at a time and also make a No Bake Mini Egg Cheesecake!
  • You can swap the butterscotch chips for peanut butter chips. I love using butterscotch chips, though. The flavor is so good, and it makes for a great peanut-allergy friendly option.
  • Chow Mein Noodles come fully cooked and ready to use. They are crunchy and slightly salty, and pair perfectly with the chocolate-butterscotch coating. You can find them in the Asian section of your grocery store.
  • You can use broken pretzel sticks in place of the chow mein noodles. This also makes for a nice gluten-free option!
