Easy Lemon Cheesecake Bars
These Easy Lemon Cheesecake Bars are so creamy and delicious! You only need 6 ingredients to make these, and they will disappear fast when you serve them to friends and family!
Since spring is just around the corner, these Lemon Cheesecake Bars are the perfect treat to whip up in preparation for the new season.
They are great for baby showers, bridal showers, Easter, or just because.
When I say easy, I mean it! You only need six simple ingredients, one of which is an ever versatile cake mix! Don’t you love cake mix?
They aren’t just for making cakes anymore! Cookies, brownies, pancakes, and these Easy Lemon Bars all can be made with the use of a helpful box of cake mix.
Ingredients for Easy Lemon Cheesecake Bars
- lemon cake mix
- 1 egg
- vegetable oil
- cream cheese
- sugar
- lemon juice
How to make Easy Lemon Cheesecake Bars – Step by Step
- Get started by combining the cake mix with the oil and an egg. Reserve about 3/4 cup of the dough to use as crumble topping for the Lemon Bars.
- Press the remainder of the dough into the bottom of a 9×13 pan and bake for about 15 minutes at 350 degrees. Allow it to cool while you get started on the filling.
- Beat the cream cheese, lemon juice, and sugar together until nice and smooth. Spread it evenly over the baked crust.
- Crumble reserved dough over the top of filling and return to oven for 20-25 minutes until baked and filling is set. Allow Lemon Cheesecake Bars to cool completely before slicing.
Tips and Notes
- To make removal and cutting easier, line your baking dish with parchment paper so that it hangs over the edges of the dish before adding the crust and filling. After the bars have baked and cooled completely, lift the bars out with the overhanging parchment paper and place on a cutting board to slice.
- If you would like to lighten up these lemon bars, you can use light cream cheese in place of the regular cream cheese.
- Store leftover Lemon Cheesecake Bars in the refrigerator for 5 to 7 days.

Recipe: Easy Lemon Cheesecake Bars
Ingredients
- 1 (15.25 oz) package lemon cake mix
- 1 egg
- 1/2 cup vegetable oil
- 2 (8 oz) packages cream cheese, softened
- 2/3 cup granulated sugar
- 3 tablespoons lemon juice
Instructions
- Preheat oven to 350 degrees F.
- Pour cake mix into a large bowl. Add the egg and oil; mix until well blended. Mixture will be slightly dry. Reserve about 3/4 cup for the topping, and pat the rest into a 9x13 inch pan.
- Bake for 15 minutes in the preheated oven. Set aside to cool.
- Meanwhile, in a medium bowl, beat the softened cream cheese with the sugar and lemon juice until smooth. Spread the mixture evenly over the baked crust. Crumble the reserved cake mix mixture over the top.
- Bake for an additional 20-25 minutes in the preheated oven, or until filling is set and the topping is lightly toasted. Cool before cutting into bars. Refrigerate leftovers.

I’m sorry you have had to move! We have been in our house for almost 14 years now (the longest I’ve ever lived anywhere!), and I can’t imagine loading all this stuff up and moving! You are right that years of marriage plus kids means a whole lot of STUFF.
These lemon bars looks so good. My mom is a big fan of lemon desserts, and I’m going to see her later this month. I’ll try the recipe then! The last time I saw her, I wanted to make another easy lemon bar recipe that called for lemon pie filling, and we literally looked at 5 or 6 stores and couldn’t find it anywhere! These ingredients look much easier to find. Can’t wait to give it a try!
