I am very excited about today’s recipe. I have literally made it four times since getting the recipe from my mother-in-law just a few weeks ago. It is hands-down the BEST roast I have EVER eaten!
Seriously, y’all, I am in love with this pot roast and so is the rest of my family!
Like I said, I cannot take credit for creating this Mississippi Pot Roast recipe. It is just one of the many amazingly yummy recipes I have gotten from my mother-in-law over the years. Her homemade spaghetti sauce is one of the most popular recipes on my site, and it’s also one of my personal favorites.
What is Mississippi Pot Roast?
Mississippi Pot Roast is a combination of five simple ingredients that all cook together in your slow cooker. It’s typically made with a chuck roast, which is inexpensive and easy to find at most grocery stores. You can also makes this with other cuts of meat, like I have with Mississippi Pulled Pork.
Cooking a chuck roast over low heat in your crock pot yields incredibly tender results, and the other ingredients added to this roast give it incredible flavor!
Now I have no answer for you as to why this is called a Mississippi Pot Roast. But if all food that comes out of Mississippi tastes as good as this, then I might have to pack my bags and head over there! It’s the south, so it’s automatically an awesome state, I say.
The simplicity of this Mississippi Pot Roast is where its try beauty lies.
What do you need to make Mississippi Pot Roast?
Here’s the beauty of this roast. It’s so simple! You’ll need:
- a chuck roast
- ranch dressing mix
- au jus gravy mix
- butter
- jarred pepperoncini peppers
All of this comes together to make the tastiest, tenderest, most delicious pot roast ever.
How do you make Mississippi Pot Roast?
This style of recipe is one of my favorites because it’s so easy. It’s a great dump and go kind of recipe. All you do is:
- Place the chuck roast in the bottom of your crock pot.
- Sprinkle the ranch and au jus mixes over the top of the roast.
- Add the butter and pepperoncini peppers.
- Place the lid on top and cook over low heat for 8 hours or more.
We’ve eaten this over rice and mashed potatoes and I loved it both ways. My mother-in-law also suggested it for sandwiches, so we might try that next!
How do you make Mississippi Pot Roast in the Instant Pot?
I get this question all the time! All you need to do is add your ingredients to your Instant Pot, add about 1 cup of beef broth, then cook over manual high pressure for one hour. Let the pressure release naturally and you are good to go.
NOW, having said all of that, I MUCH prefer to make my roast in the crockpot. The flavors and texture are just better overall in my opinion.
Is Mississippi Pot Roast Keto?
Yes! If you’re following a Keto plan, you are in luck! This recipe is very low in carbs, so it will fit right in with your diet. My one suggestion would be to serve it with some delicious low carb sides like mashed cauliflower, cauliflower rice, or garlic roasted asparagus.

Recipe: Mississippi Pot Roast {The BEST EVER Pot Roast}
Ingredients
- 1 (3-4 pounds) chuck roast
- 1 packet ranch dressing mix
- 1 packet au jus gravy mix
- 1/4 cup butter
- 4-5 pepperoncini peppers
Instructions
- Place roast in the slow cooker and sprinkle the top with the ranch dressing mix and the au jus mix. Place peppers on top of the mixes, and add the butter.
- Cook over low heat for 8 hours. Serve with noodles, rice or mashed potatoes. Enjoy!
Notes
- Do not add any water or broth to this! It will make enough liquid as it cooks.
- This tastes delicious with potatoes and carrots! I like to add a few quartered russet potatoes and a large handful of baby carrots to the crockpot when there is about 1-2 hours left of cooking time.
Wondering if I could add a can of cream of mushroom or golden mushroom to make the gravy come out thicker ?
Just add equal parts cornstarch and water (combined to make a slurry before adding it to the liquid) and it will thicken
Incredibly delicious and so easy! I added red potatoes, celery, and carrots with about 2 hours left. Also, added a little pepperoncini juice for an extra kick. I can’t wait to make this recipe again!
Has anyone made sandwiches using this? Having a gathering tomorrow and want to make this and serve with some sandwich buns. Good idea or no?
Use kings Hawaiin rolls. Slice whole package in half. Place sliced side up on baking sheet. Brush melted butter, minced garlic, and parsley over rolls. Put under high broiler for 2-3 minutes until slightly toasted. Add meat, put tops on, brush with any remaining butter if there is any. Cheese is optional but is quite good addition.
Can you make this on High for a quicker time?
Hi Gina, for this cut of meat I only recommend cooking it low and slow.
I tried this recipe today and it is sooooo good! I didnt have much time so I did it on High for about 4 hours and it turned out sooooo good! My family loves it!

I don’t recall if I’ve left a review for this recipe before but it is often our “go to” slow cooker dinner on the very busiest of Fall work days. So comforting and delicious. We love putting whole baby carrots (the ones with the little bits of the green top still attached) in with the mix. Sometimes potatoes too but mashed taters are the best. Thank you!
I am throwing out all my other pot roast recipes. This is a winner! It fell apart and was sooo full of flavor. I put the pulled apart meat and the potatoes and carrots along with a generous amount of broth in an oven safe cast iron casserole pan in a warm oven before my guests arrived. For dinner, all I had to do was place the casserole on the table. Easy peasy.
My daughter has made this twice and it has good flavor but it’s kind of oily. What does the butter contribute to the recipe?
Can I omit the butter?
This is a bit of a long winded story, but here goes. One of my best friends in the world is a bass guitarist. I went to his place to rehearse, which wasn’t unheard of as a guitarist. He had this in the crock pot for the group. Paired with potatoes, carrots, and, of course, our favorite tasty beverage. This recipe outshined the lead guitar player. As the lead guitarist, that’s really tough to admit! lol. Fast forward a few years to an October day in Texas and my wife is texting me asking me for the exact amount of butter for this roast. It is lovely and the only way we make pot roast now!
Has anyone tried making this with a venison roast? Suggestions since venison is leaner. More butter?
I would think more butter or some beef stock to add some juice. Venison would be a lot healthier! I love venison!!
I make it with venison all the time! I use the crockpot to cook all day and then put it in the Instapot for a bit – that way there is enough juice. I do not change the recipe at all! Add a little flour to thicken the gravy/ delicious!
I have also made this recipe with bear meat. We put the meat on slider rolls. Delicious!
Best pot roast ever. I used arbol chiles instead (took them out after cooked) which gave it I nice subtle kick. Made home made ranch mix and used beef bouillon powder. Added 1/3 cup of broth halfway through and carrots the last 3 hours. I usually hate pot roast, it will be a go to from now on. About 6 meals for under $20. Thanks.

You don’t add any liquid?
No, it will create plenty of liquid on its own.
Personally, I do add liquid! Just 1/2 to 1 cup of water, but I also add pepperocini juice, just be prepared for the extra kick of spice!
Super delicious and very easy. I’ve tried many pot roast recipes and this is by far the easiest (almost foolproof) and one of the tastiest.
I’ve cooked pot roasts a million times but never tried a Mississippi roast. This recipe took a split second to throw together (awesome in itself) and the finished product was AMAZING! Meat was so tender and flavorful. My husband told me we need to add this to our rotation and never make a pot roast any other way- that’s how delicious it was. Makes killer leftover tacos. Substituted gravy with beef consume and French onion soup (Campbell’s) and it was amazing

Pot roast is one of my favorite comfort foods, I tried this recipe as an experiment and I think it might be my new go-to from now on. The meat was delicious, and I’ve never had such flavorful potatoes from any other pot roast recipe.
