These Fruity Pebble Rice Crispy Treats are a delicious no-bake dessert full of gooey marshmallows and fruity pebbles cereal. They are a fun twist on the classic recipe for rice krispie treats, and are an easy snack made with just four simple ingredients.

My kids love regular rice krispies treats, so I decided it would be fun to make a new version featuring Fruity Pebbles. Let’s just say they were big fans!

And with St. Patrick’s Day right around the corner, these Fruity Pebble Rice Crispy Treats would be a deliciously easy treat. They are full of vibrant colors, so they would also work perfectly for a rainbow-themed party!

Easter and other spring events are on the horizon, too. These would make a great addition to your dessert table along with some Carrot Cake Cookies and Strawberry Brownies.

This is such an easy recipe, and the colorful twist makes them perfect for a birthday party, bake sales, or simply for a fun and colorful after school snack! Try them and I bet you’ll love them as much as we do.

Ingredients for Fruity Pebble Rice Crispy Treats

  • Salted butter – using salted butter helps to balance the sweetness from the Fruity Pebbles. You can also use unsalted butter and add a pinch of salt in place of salted butter.
  • Vanilla extract – this adds a depth of flavor to the bars, but is optional. 
  • Mini marshmallows – I prefer mini marshmallows because they melt easier, but you could also use the same amount of regular-sized marshmallows. Make sure you use fresh marshmallows; older marshmallows will not melt as well!
  • Box of Fruity Pebbles cereal – you can use the name brand or store brand of the cereal. Just make sure that the cereal is fresh and not stale!

Additions and Substitutions

  • You can use marshmallow fluff in place of the marshmallows. Simply add the marshmallow fluff to the melted butter as directed in the recipe.
  • If you would like a treat that is not as sweet, you can use 3 cups of fruity pebbles with 3 cups of plain rice krispies cereal. 
  • This recipe is super easy to customize. You could make a chocolaty version with Cocoa Pebbles instead!
  • Add some white chocolate chips for a little flavor variation!

How to Make Fruity Pebbles Rice Crispy Treats – Step by Step

Step 1: Melt the butter in a large pot over medium-low heat.

Step 2: Stir the marshmallows into the melted butter and keep stirring until all the marshmallows have melted. Remove the pot from the heat.

Step 3: Stir in the vanilla extract.

Step 4: Add the fruity pebbles to the marshmallow mixture and stir until well-mixed.

Step 5: Transfer the fruity pebble mixture to the prepared pan.

Step 6: Spray a rubber spatula with nonstick spray and press the cereal gently into an even layer. Allow to cool to room temperature for 1 hour.

Tips and Notes

  • Grease your pan. Make sure to rub your baking dish with some softened butter to prevent your cereal treats from sticking. You can also coat the pan with a nonstick cooking spray or place a sheet of parchment paper on the bottom of the pan.
  • Use a greased spatula, wooden spoon, or slightly wet hands when forming the treats. You can also use the wrapper from a stick of butter to help you press them into the pan!
  • Don’t press too hard when adding the cereal mixture to the pan. This can make your bars hard, and we want them to retain that gooey texture!
  • Making ahead of time: you can definitely make your treats up to two days ahead of time, but I do think they taste best when they are freshly made.
  • Freezing: wrap your bars individually with both plastic wrap and aluminum foil before placing in the freezer for up to three months. Thaw on the counter before serving.
  • Store your Fruity Pebble Rice Crispy Treats in an airtight container at room temperature for 4-5 days. 

Can I make these in the Microwave?

Yes, you can! To make your Fruity Pebble Rice Crispy Treats in the microwave:

Place the butter and marshmallows in a large microwave-safe bowl and microwave in 30-second increments until the marshmallows are melted. Stir the vanilla extract into the melted marshmallows. Add in the fruity pebbles and stir until well-mixed. Transfer the fruity pebble mixture to the prepared pan. Spray a rubber spatula with nonstick spray and press the cereal mixture gently into an even layer. Allow the fruity pebble treats to set for 1 hour.

  • 3 Tablespoons salted butter
  • 10 ounces mini marshmallows
  • 1 teaspoon vanilla extract
  • 6 cups Fruity Pebbles cereal

Instructions
 

  • Grease a 9×13 inch baking dish with butter or spray with non-stick cooking spray and set it aside.
  • Melt the butter in a large pot over medium heat. Stir the marshmallows into the melted butter and keep stirring until all the marshmallows have melted. Remove the pot from the heat.
  • Stir in the vanilla extract. Add the fruity pebbles to the marshmallow mixture and stir until well-mixed.
  • Transfer the fruity pebble mixture to the prepared pan. Spray a rubber spatula with nonstick spray and press the cereal gently into an even layer.
  • Allow the treats to set for 1 hour before cutting.

Notes
