Hey y’all, long time no see! Sorry I’ve been a bit MIA lately. It’s for good reasons, I promise!
I’ve been very fortunate to have my mom in town visiting for the past few weeks, so I’ve been spending a lot of time catching up with her, relaxing, and just kind of taking a mental break from everything. The past five months have been pretty stressful, so it’s been nice to kind of unplug for awhile.
But, I can only unplug for so long, cuz these kids of mine feel like they gotta eat every 12.7 seconds! Anybody else out there get requests for “snacks” or the “what’s for dinner?” question about five million times a day?! It feels never ending!
It’s days like those that I’m so very thankful to have my Instant Pot. It’s quick, easy, and cleaning up one pot is basically my favorite thing about it. If you don’t have one yet, I highly HIGHLY recommend it! Especially for yummy recipes like this Instant Pot Lasagna Soup!
This recipe has quickly become one of my favorites that I’ve created for the Instant Pot, and that’s saying a lot because my Instant Pot Loaded Potato Soup is a big hit at our house, and with all of you! Be sure to try it out if you haven’t had a chance to yet!

Instant Pot Lasagna Soup
Ingredients
Soup:
- 1 Tablespoon olive oil
- 16 oz mild Italian sausage
- 1/2 cup diced onion
- 3-4 garlic cloves,, minced
- 1 (24 oz) jar marinara sauce
- 1 cup chicken broth
- 2 cups water
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- pepper,, to taste
- 8 oz broken lasagna noodles
- 1/2 cup heavy cream
Topping:
- 1 cup ricotta cheese
- 1/2 cup grated parmesan cheese
- 1 teaspoon dried parsley
- 1 cup shredded mozzarella cheese
Instructions
- Turn the Instant Pot to saute and add the olive oil. When hot, add the Italian sausage and cook, crumbling with a wooden spoon or spatula. Stir frequently to prevent the sausage from sticking to the bottom of the pot. When Italian sausage is partly cooked, add the onions and garlic and continue cooking for about 4-5 more minutes, until onions are soft and meat is no longer pink.
- Stir in the chicken broth, water, marinara sauce, spices, and broken lasagna noodles. Place the lid on the pot and flip the valve to "sealing." Cook over manual high pressure for 6 minutes.
- While the soup is cooking, prepare the ricotta topping. In a small bowl, stir together the ricotta cheese, grated parmesan cheese, and dried parsley. Cover and place in the refrigerator until ready to use.
- Once the time is up on the Instant Pot, perform a quick release. When all of the steam has escaped and the pin on the lid has dropped, open the lid and stir in the heavy cream. Divide the soup into bowls and top each with a scoop of the ricotta mixture and a sprinkle of mozzarella cheese. Enjoy!

This was delicious! I did make these adjustments – some based upon recipe reviews noted here:
* spicy italian sausage * added a can of fire-roasted tomatoes * sauted mushrooms with onions and sausage * used all chicken broth (3 cups) and no water. We’ll use a different noodle next time, as the lasagna noodle pieces made it pretty messy to eat.
DEFINITELY a soup, though. Not nearly as thick as it appears in the photo.

This was so flavorful. Like others I had to add more liquid make it more soup-like. It was still thick after I added an extra cup of broth, but we like thick soup in my house. It was a little spicy, too, so next time I’ll choose a more mild sausage. I used no-boil lasagna noodles since that’s what I had on hand, and they worked just fine. Finally, I added spinach when I added the cream. Overall, yum! We’ll have it again with a couple minor adaptations.

Very tasty! Made a double batch that turned out great. Only suggestion would be to add maybe a 1/2 of water per batch as mine came out more like a deconstructed lasagna than a full fledged soup.
Will likely add roasted bell peppers and mushrooms to my next batch for added flavor.

I made this tonight and it tasted AMAZING!!!!! I decided NOT to use Lasagna noodles because some mentioned that they didn’t cook through. So I used 8 oz. of the little spiral ones and it was perfect!!!! Cooks, I can not tell you how easy this was to make and the taste is like Old World Italy! And the cheese mixture that is spooned on top of the hot soup is creamy and delish!!! Serve w/ a good bread!

Made this last night and it was absolutely delicious. Tasted even better for lunch today. I did add about 1/2 cup additional water and it was of a soup consistency. This is definitely a keeper!

This recipe needs a few tweaks. Could be because I used veggie broth and veggie sausage as substitutions. For ppl who need to do that – here’s my review and some helpful tips!
The lasagna noodles weren’t cooked all the way and there wasn’t any ‘soup’. You need to add more liquid than called for and pressure cook for longer time and don’t do a quick release right away.
If you like flavor, you need to amp it up because this recipe is bland. (maybe because I’m missing the fat from the real sausage) Suggestions would be to add a bay leaf or two. Fennel Seeds and a bit of sugar. Maybe some fire roasted red peppers would be nice if thrown in with the onion and garlic. I’ll keep on searching.

Try this again w/ the right ingredients and I think you will find it is delicious. Some recipes just can’t be changed and w/ your changes you didn’t like it. Not nice to give her a bad rating just because you don’t like the way you changed it.

This looks like it will hit the spot anytime of the year, and especially when it gets cold outside! Where I live on the central coast of California it is cold year round, so I’m good to make it right away! Just bought an instant pot and used it last night for the first time, so I’m ready to make this delicious recipe and your others as well!

This is SOOO yummy!! Tried it last week and my husband has literally been eating it cold by the spoonfuls standing at the fridge. Already making another batch! I didn’t have ricotta or heavy cream, so used a combo of things I had on hand and stirred them in at the end when still warm and it turned out AMAZING! Thank you for the recipe!!!

The flavor is right on point, but my noodles came out a ait tough and it was fairly lacking in soup character. To the point that I thought I forgot the water. Then I remember I’d added two cups to the marinera and shaken it around to get as much as possible out of the jar.
It is delicious though. Going to try it again without an immediate quick release – mmaybe I iost too much liquid to steam and the noodles would have been a little softer. Can’t stress enough how good the flavor is though!
