Sheet Pan Sausage, Peppers, and Potatoes
Sheet Pan Sausage, Peppers, and Potatoes is an easy meal that comes together on one sheet pan. It’s the perfect weeknight dinner and is a great way to make a full meal all at once using simple and delicious ingredients.

Today’s Sheet Pan Sausage, Peppers, and Potatoes recipe is all about simplicity, which I’m sure a lot of us need and appreciate on busy weeknights.
But even on nights when we aren’t so busy, or on weekends when we have more free time, I don’t always like creating a big mess with lots of dishes to wash. Or preparing a main dish and sides, too.
And if you’re a regular visitor here on my blog, then you know I love easy recipes that are simple to put together but still taste great like Air Fryer Steak Bites or a Chicken BLT.

For all of those reasons, a sheet pan dinner recipe like Sausage, Peppers, and Potatoes can be a total saving grace. Your veggies and main dish cook altogether on one pan giving you a complete meal at the end of cooking time.
I like to line my sheet pan with aluminum foil or parchment paper to make cleanup even easier because the less dishes to wash the better! Plus, if you want to skip out on washing a bowl, mix all of your ingredients together in a large ziploc bag and throw the bag away when you’re done! Easy!
Ingredients for Sheet Pan Sausage, Peppers, and Potatoes
- Smoked sausage – chicken sausage, pork sausage, or turkey sausage will all work great. As long as it is precooked and link-style, feel free to use whatever type of sausage you prefer.
- Potatoes – I like to use either red potatoes or baby yellow potatoes. You could also use sweet potatoes as long as they are chopped small.
- Bell peppers – you’ll need two large sweet peppers. I like to use one red pepper and one green pepper, but you can use any color you prefer.
- Onion – one medium red onion chopped into wedges is all you’ll need. You could also use yellow onions instead.
- Olive oil and Worcestershire sauce – are used to coat the rest of the ingredients and add so much flavor.
- Spices – you’ll use a combination of italian seasoning, garlic powder, salt, pepper, and smoked paprika to season your sausage, peppers, and potatoes.

How to Make Sausage, Peppers, and Potatoes

In a small bowl, whisk together the olive oil, Worcestershire sauce, Italian seasoning, garlic powder, salt, black pepper, and smoked paprika.

In a separate large bowl, combine the remaining ingredients.

Pour the olive oil mixture over the sausage and vegetables in the large bowl, and toss to coat evenly.

Transfer the sausage and vegetable mixture to a large baking sheet, spreading it out in a single layer. Bake in the preheated oven for 30-35 minutes.

Tips and Notes
- Line your baking sheet with aluminum foil. This makes clean up so much easier!
- Mix all of your ingredients in a large ziploc bag instead of dirtying a bowl. This helps cut down on cleanup time, too!
- Change up your veggies. This is a versatile recipe so feel free to swap or add different vegetables. Fresh green beans, broccoli, yellow pepper, or brussels sprouts would all work well here.
- Store leftovers in an airtight container in the fridge for up to four days.

- 1.5 pounds baby potatoes, red or gold, quartered
- 1 large red pepper, cut into strips
- 1 large green pepper, cut into strips
- 1 red onion, chopped into large pieces
- 3 Tablespoons olive oil
- 2 Tablespoons Worcestershire sauce
- 1 1/2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
Instructions
- Preheat oven to 425 degrees. Line a large sheet pan with aluminum foil and spray it with nonstick cooking spray.
- In a small bowl, whisk together the olive oil, Worcestershire sauce, Italian seasoning, garlic powder, salt, black pepper, and smoked paprika.
- In a separate large bowl, mix together the sliced sausage, potatoes, bell peppers, and onions. Pour the olive oil mixture over the sausage and vegetables and stir to coat everything evenly.
- Spread the sausage and vegetables onto the prepared baking sheet in an even layer. Bake in the preheated oven for 30-35 minutes, or until the potatoes are tender and lightly crispy, stirring the ingredients once or twice during cooking time. Enjoy!

I’ve made this several times in the last month to use up a giant package if smoked mozzarella and artichoke sausage I bought at Costco. I’ve been using tri-color baby potatoes from Trader Joe’s and Aldi. I halve them and cut the baking time down a bit. Thanks for a great easy recipe.
Tried this today for noon meal and it was really good! Didn’t have fully cooked sausage, so had to cook mine, which took a little longer, but it was still very tasty and we’ll have it again.

Im using this recipe for the first time, i boiled my sausages first while washing and cutting my potatoes. Also made my own Italian dry mix. I hope it comes out amazing. Fingers crossed.
